Meskouf
An Iraqi ancient method used for grilling ?sh whose
historical roots extends back to the Sumerian and
Babylonian ages, where several of engravings were found
explaining the method for grilling ?sh this way.
Among the most famous kinds of?sh that are grilled
by this methods are the Shabout, Katan and Boni, which
are caught by ?shermen from the rivers of Tigris and
Euphrates. This grilling ?re uses the woods of Rao-
wong, ?gs, and apricot trees which give the ?sh grilled
a special ?avour
Such dishes are directly related to the famous street of
Abu Nawas in Baghdad on the banks of the eternal Tigris.
After eating such dishes, Iraqis are used to eating Iraqi
dates & drinking the tea made on charcoal with cardamom.
is is what all Iraqis ask for without an exception from
the north of Iraq to the south. Iraqis prefer their tea
“Heavy with extra sugar”.
